2 c. powdered sugar
½ white of egg, mixed from dried or pasteurized liquid egg white (as directed on pkg.)
¼ t. peppermint flavoring
1 T lemon juice, fresh squeezed
Any color food coloring if desired ~ we prefer them white

Sift powdered sugar into lg bowl. Make hole in middle of sugar with spoon. Mix egg white in small bowl; add peppermint flavoring and lemon juice. Pour into sugar. Squeeze mixture with fingers until smooth. (Plastic disposable glove is great here.) If using food colorings, divide candy and add desired coloring to portions. Sprinkle a little powdered sugar onto clean work surface and onto rolling pin. Roll out to about ¼ in thick. Use small cookie cutters to cut out shapes. (An apple corer works great.) Use a small spatula to lift candies onto a cookie sheet. Let them harden for ½ hr.

Rachel and I discovered that if you add a chocolate chip to the middle of the peppermint cream, you get a delightful peppermint patty “sensation”!
