1 1/2 c. dry unseasoned bread crumbs

1 c. grated Parmesan cheese plus 4 tbsps.

1 tbsp. minced fresh parsley

1 tbsp. minced fresh basil

1 tsp. salt

1/2 tsp. pepper

2 large eggs

1 tsp. water

1/2 c. flour

8 veal scallops (pounded to 1/8 inch thick)

1/3 c. oil

1 large jar of Ragu Mushroom Spaghetti Sauce

8 slices Mozzarella Cheese

Directions:
Directions:
Mix bread crumbs, salt, pepper, parmesan cheese, basil and parsley together.
Whisk together eggs and water.
Roll each scallop in flour. Then in egg wash and finally in the bread crumb herb mixture.
Heat oil in fry pan and brown veal scallops on each side about 1-2 minutes. Remove from oil and drain on paper towel.
In a large greased rectangle baking dish arrange scallops, pour spaghetti sauce over and top with mozzarella cheese.
Bake in 350 for 30-40 minutes until cheese in bubbling.
Serve with a fresh garden salad.
